Garlic Yoghurt
- 500g Greek yoghurt
- 4 garlic cloves, finely grated
- Juice of ½ lemon
- Salt, to taste
Spiced Beef
- 450g beef mince
- 1 medium onion, finely diced
- 1 tsp sweet paprika
- 1 tsp garlic powder
- ½ tsp ground cumin
- 3 tbsp tomato paste
- Salt and pepper, to taste
Paprika Butter
- 60g butter
- 1 tsp sweet paprika
To Serve
- 350g cooked pasta (penne or fusilli work well)
- Cherry tomatoes, halved
- Feta cheese, crumbled
- Fresh parsley, chopped
Method
1. Prepare the Garlic Yoghurt
In a bowl, combine the Greek yoghurt, garlic, lemon juice, and a pinch of salt. Mix until smooth and set aside.
2. Cook the Spiced Beef
In a large frying pan over medium heat, sauté the onion for 2–3 minutes until soft. Add paprika, garlic powder, and cumin, stirring for another 2 minutes to bring out the aroma. Add the mince and cook until browned (around 10 minutes). Stir in tomato paste, season with salt and pepper, and simmer for a further 2–3 minutes.
3. Make the Paprika Butter
In a small saucepan, melt the butter on low heat. Add the paprika and stir until it begins to bubble gently. Remove from heat.
